It's up to whatever Judge you get, JP, Municipal or whatever.
I've had two traffic tickets dismissed in my lifetime and both were because the tickets were not filled out properly.
I would contact the office of the Judge you are supposed to appear before and let them know that the information on the traffic ticket is incorrect and see what they say.

I generally will try to run a vehicle tag before I light them up so I know before the stop if the vehicle has a "hit" for a warrant for someone associated with that vehicle.
In doing so, I can often (but not always) determine if the vehicle has current coverage. If it does, then I don't generally ask the driver for proof since I already have it.
Insurance companies are required to upload their information to the state every Friday. So if you buy a policy on Monday and I stop you on Tuesday, my computer may not be able to confirm coverage. If you have the proof of insurance card with you - you're good to go, regardless of the status displayed on my computer.

Do you really believe that he stopped you, and wrote you tickets, and never ran your license plate?????
And you are not the only one to go over the speed limit or not have proof of insurance in your car, just one of the many nowadays who get caught, and then want to whine on the internet about how much it inconveniences you to take care of it!

I'm not disputing that you probably had current coverage, but if the Officer's computer was unable to confirm it and you did not have current proof with you, then he was justified in writing the citation.
Have you contacted the court? Very possibly may be able to fax or email them current proof of insurance to have that portion of the citation dismissed. Its up to the court to decide if you can do that or have to appear in person with proof, but I'd give it a shot and call them.
