I depends on the judge. The only time I ever fought one, the day of the trial, the judge pulled me to the side and asked what I was trying to accomplish. I told him keep it off my record. He told me to pay the clerk $50 bucks and my ticket would be dismissed. I paid. I figured he had a tee time and too many hearings that day.
I had a county attorney tell me always fight the ticket. If the officer doesn't show, you will win, if he does and you loose, appeal the conviction to they county appeals court. He said they never hear traffic tickets at that level and would throw out the conviction. Of course by the time your done, court cost would be more than the ticket.
You mentioned he didn't check your insurance. When they run your plate it automatically searches your insurance now day. They don't need to see your paper copy, unless its a new policy and not in the system yet. Some still ask to see if you carry it.

I passed him on the down side of the Baytown bridge while I passed two 18 wheelers going 45 or so . I got back over in the turn lane and exit the freeway.
I was just passing the trucks guess you can speed to pass either.
It is what it is . If it wasn't for the insurance part I would just pay it but now I gotta miss work to show proof of insurance[emoji35]

All that an officer can do is make an accusation. If a judge or a prosecutor wishes to dismiss a charge then there is nothing an officer can do about it.
Having a wrong vehicle on a citation does not negate the traffic charge. If an officer watches you run a stop sign and issues a citation, he isn't writing you a citation for driving a red Ford or a blue Chevy. He is writing the citation for the stop sign. An officer may have a video of the actual offense. The traffic stop and likely the person signing the citation also be on video orbrecorded on the citation if it is electronic. So now we may have a video of the traffic charge, a video or photograph of the person driving at the time and then a signing of the citation to prove that he was given the information. If I judge or prosecutor can watch a person run a stop sign on video, then have proof beyond a reasonable doubt that the person in court is in fact the person that ran it and he wishes to dismiss citation because the officer wrote green instead of blue or black on the citation, then he can do so within his authority.
The point is that the vehicle is not the crime. The action is the crime. If it was some kind of possession crime then the vehicle or whatever the item was would be important. In this case whether a motorcycle, a pickup or a passenger vehicle does not matter. The color does not matter. Those are simply statistics put on a citation that have nothing to do with the incident. But again, if I judge or prosecutor wishes to not be bothered with taking the case to court then the charge can be dismissed with the officer having no say-so in the matter.
Roll the dice and see what happens.

I have been driving for a while, and have never seen any speed limit sign that said "Except to Pass" under the number for the speed limit. You were wrong! Pay the ticket or take Defensive Driving and move on! How in the world could you be mad because you have to show proof of ins for them to kick that out. If you would have had proof of ins in your car like is required by law, you would not have to do this.

No, you are mad because you have to take off work to show proof of insurance when the law says you were supposed to have that proof in your car to begin with, and you did not have it! If you show proof of insurance, then they dismiss that part of the ticket. If you don't want to do that, then just pay for both infractions.
So, are they just supposed to take your word for it that you do indeed have insurance???
You should be mad at yourself for not having your insurance card in the car, not mad at them because you have to go down and show proof!!!!
