Idk, I think Texas would beat Cal 6/10 games but that's just my opinion. Most people realize that Cal doesn't have a good defense at all, and most are probably thinking that was just an off game for Texas on their first road game...
Neutral site I think Texas is overall the better team then Cal, but who knows. I was thinking Texas would come in at 24 or 25.
You don't have to have a good defense if you can score on almost every possession. All your D has to do is to get a couple of stops by your doing or the other teams (turnovers, penalties, bad series) and you have a chance to outscore the other team.
Cal's passing attack and rushing when they had to was a bad matchup for the Texas D. They didn't turn the ball over and made some key plays to keep drives going. They took advantage of a bad night in the back end for Texas with no pressure upfront, that proved to be a terrible combination. I believe that Texas beats Cal 8/10 times, but Cal won the one they will count in the books.
I read an interesting perspective today. What if Texas lost to ND by 10-14 points, but beats UTEP and Cal? The team is 2-1 with going into the bye week and everyone would talk about them team being right on track. While I saw some things I certainly do not like, I also am trying not to knee jerk over one game on the road. Most Texas fans thought they would lose a game or two they shouldn't (Cal so far), but win some games they shouldn't (ND…TBD).

This is correct. This is why the rankings, etc don't mean much now(even more so preseason). At the end of the day, your team is as good as your record after 12 games. It all evens out. Everyone can always so what if, but those balance out over the course of a season. All you can really hope for is to try and be consistent and improve a little bit each week. I think the inconsistency is what most Longhorn fans are concerned about at this point. But honestly, that just comes with having a younger squad. They will be fine IMO, just need more snaps
