      Was digging through the deep freeze and found a couple of last years backstrap whole that I had forgotten about. Decided to do Bonesplitters Sugar Cure method on these. Did it last year and was great. Got them in the fridge curing right now. Thinking Wednesday will put them on the electric smoker with pecan hulls and pecan wood for smoke.

                Ok put it on the Smoker today with pecan hulls and pecan chips. Sprayed it with a little apple juice as it cooked to a internal temp of 150. Man its some good stuff. Taste like ham.
