        I buy my tenderquick at brookshires. For some reason i can never find it at walmart or other stores but brookshires will carry it.

              Grocery store where the salt is. Cooking time varies with the size of the cut. I smoke for and hour or two in my elect smoker and finish in the oven. Probably around 3-4 hours total.

                            That looks good. I just took some axis pastrami off the smoker that I tried for the first time. This one was a little salty but will definitely be doing one again.

                              Just finished a pork loin and it was money.... took it off the heat and it lasted about 45 minutes... beer and fresh smoked pork is very good it seems... thanks for the heads up on this... its part of the hog hunt from now on...
