Pan seared swordfish with balsamic vinegar, capers and roasted tomato.
Swordfish around the 50-100 lb mark = best filets
Grilled or seared Mako shark steaks are awesome as well.
Panko crusted Wahoo steaks
Chicken Mahi Mahi are wonderful sized filets that can get fixed pretty much anyway without losing flesh firmness.
And the diminutive Vermillion snapper (BEELINERS) Add peanut oil and it's hard to stop eating fresh fried filets.
