    We did that tonight, but on the pit I built. Been using some hickory from a dead hickory tree we had on the back of the property. I have burnt most of the wood from that tree. That hickory I would have to say is better than mesquite, that I grew up using, most of my life.

    On this past New Years, I cut up that hickory tree, I have been talking about doing for a year now. Then finished the pit, I had to make a grill for it, then put some rods in the bricks to hold the grill. New Years was my first time to ever cook steaks, been cooking fajitas for a long time, never tried steaks. So we cooked steaks with hickory for New Years, those steaks came out great. So I cooked steaks for my wife's birthday, that was the second time cooking steaks, second time using hickory. Then tonight I cooked steaks, using hickory. They came out great. My wife marinates the steaks, then cuts up some red potatoes and onions, then puts them in some aluminum foil and puts butter on them, the wraps up the taters. I cook those for about 30 minutes. Then throw the steaks on for about five minutes. That stuff comes out great. Much better than most of the steaks we have gotten at restaurants, including steak houses. My wife figured up, we have about $12 in both steaks and the potatoes, we had tonight. I would bet the steaks were about 14 oz. each.

                  That looks pretty good. I just cooked steaks last wkend on my PitBoss and they looked the same. Can be done sir.

                                I didn’t even use the grill when I used charcoal.
                                it’s not what I would consider the right tool for the job.

                                That award goes to my Wagner Ware 11 cast iron skillet. Butter basted with aeronautics, and oven finished. THAT is how a steak should be cooked.
