Another vote for Jackson's in Crosby. I tried their boudain this year and will be getting more next year. Good selection of link and pan sausage flavors. Good people and quick turn around on your meat even opening weekend and Thanksgiving.

I've used Ainsworth's between Crosby and Huffman successfully too, but they shut down between Christmas and New Year... Gave up trying to deliver my boned out meat to them and took it to Allen's...
Used to use Bellville Meat Market, but they messed up my order 2 years in a row, and shorted me bad. They also started using synthetic casings on their smoked sausage... They're tough to cut into or bite... Allen's uses natural casings.

Whitaker's did mine for years until I started doing my own. Think I'll take some to him for jap/chz summer sausage.... been missing that.

I always use Smokey Denmark in Austin. I don't go to Hudson's because I want my deer back. I know a few guys that love Hudson's but I like to know I'm getting my meat back.
Smokey's seems a tad high, but so far everything has been worth it.
Now that I am in DFW, I need to find a processor up here, so keep the reviews coming.
