    Another vote for Jackson's in Crosby. I tried their boudain this year and will be getting more next year. Good selection of link and pan sausage flavors. Good people and quick turn around on your meat even opening weekend and Thanksgiving.

        Kuby's J&C sausage is awesome! The jerky is great too!
        Syracuse is also great, but I'm closer to Kuby's.

          Farmers Meat Market in Boerne is the best I've had around the SA area in years. Try their bacon wrapped chop steak! Great dried sausage as well

            Mark Roberts to the north of Uvalde on 83. Don't go there often but he makes the best deer slim jims and spicy slims jims I've ever had. Pretty dang good jerky too!

                  C & G processing in snook is who I currently use. He is a member on here and his prices are great and have had no issues and the meat always turns out awesome

                  Creative wildlife processing and taxidermy in conroe is who I used to use and was very happy with just too far now

                    I'll have to second Allen's. If you like smoked sausage, Italian sausage, or pan sausage, he can't be beat. Garn-dang-t you you get your meat back too. On the fresh sausages like Italian that is stuffed, you even get the last little bit that won't feed thru the stuffer/grinder in a package by itself. Plus he's a really great guy.

                    I've used Ainsworth's between Crosby and Huffman successfully too, but they shut down between Christmas and New Year... Gave up trying to deliver my boned out meat to them and took it to Allen's...

                    Used to use Bellville Meat Market, but they messed up my order 2 years in a row, and shorted me bad. They also started using synthetic casings on their smoked sausage... They're tough to cut into or bite... Allen's uses natural casings.

                      Definitely the best up here. Great family operation and just good folks.

                      Whitaker's did mine for years until I started doing my own. Think I'll take some to him for jap/chz summer sausage.... been missing that.

                      He's a decent taxidermist as well.

                        I cut up my own deer but if I want deer sausage, Sklenarik's in Miles is the best I've ever used. Those guys know sausage, and they are mighty proud of it.

                          I've always heard great things about Bayco in Seymour as well, but have never used them personally.

                              I always use Smokey Denmark in Austin. I don't go to Hudson's because I want my deer back. I know a few guys that love Hudson's but I like to know I'm getting my meat back.

                              Smokey's seems a tad high, but so far everything has been worth it.

                              Now that I am in DFW, I need to find a processor up here, so keep the reviews coming.
