Eddie Ray's does a very good job he also has a place in elm mott as well. Eddie Rays specials rock. I know the owner and you get your deer everytime.
Willie Joe's Processing in Schulenburg is great. Been going there for 8 years now. My kids love their dry sausage. Just picked up a deer today...under new ownership but still great service.
I also really like Rau's in Brenham for a great change of pace from Willie Joe's. Their smoked sausage is out of this world.
Johnny Clifton in Fredericksburg. He is pretty much a one man show, but does great work and you know you are getting your deer back. The dry ring sausage, summer sausage and jalapeno cheese sausage are all great. He also vacuum seals the meat.
Bernhards in Kerrville and Klein's in Pflugerville also do great work.
Another vote for Jackson's in Crosby. I tried their boudain this year and will be getting more next year. Good selection of link and pan sausage flavors. Good people and quick turn around on your meat even opening weekend and Thanksgiving.

Millers in Belton TX. One deer at a time. Reasonably priced and dang good. Basic processing is 14 bucks a quarter. Backs traps are no charge with quarters. All vacuum sealed. Sausage is to die for. Dirk and Robert do ya right.
