        OK, take a whole back strap and butterfly it, rub it down with olive oil or butter, season it, spread cream cheese on the inside, stuff with cherries and walnuts, now do a bacon weave and wrap the loin tightly in it, grill or smoke until internal temp is 130 / 140, rest and slice, delish. I have done elk and moose this way, have not done deer but I bet it will be laripen good.

            I've butterflied them and stuffed with mushrooms, panko bread crumbs and parmesan cheese.

            I took the lazy route this weekend. Mule deer strap part, turned out nice.
