                  Also, my wife and kids are super suspicious of any silver skin or extra chewy textures in ground/sausage. My goal would be to find one that's sensitive to this.

                                Imagine you took the ingredients of a loaded baked potato, matched its weight in sausage, and stuffed it all in a casing together and smoked it. I bet I gave out 1000# of that stuff to customers, friends, and family last year and it has been a topic of discussion at most encounters since. They also do a cranberry/jack cheese sausage that was very good too.
