        I’ve not used Durhams but have used Jasper Quality Meats. The sausage was pretty good.

                Just picked up our Sausage at Kuby's Wild Game Processing in Dallas, Texas. Ten pounds of Hunter sticks, fifteen pounds of Smoked Links and twenty pounds of Bratwurst.Best I have ever had!!

                      Devine meat Co in Devine, single batch processing, burger meat in 1# packs, they still smoke their sausage with real wood not electric smoke like a lot of big places are doing now. And no skinning fee, (try the “dos pendejos” dried sausage if you’re ever in the area)

                                I use JT`s in Stephenville but decided to do it myself this year. It would have cost me 326.75 based off of what they charge. 110 basics plus 15lbs of jerky meat / (7.25 lbs. after smoking) x $30 per lb. 216.75 for a tot al savings of 326.75.
                                Some processors charge for jerky weight after smoking and some before smoking. Here`s a few examples of the difference in price.

                                15 lbs. x 17= $255 ................ weight of meat prior to smoking.
                                7.25 lbs. x 30= $216.75......... weight of jerky after smoking.
