          Believe it or not. The yellow in cheddar comes from food color. Or so that's what I read on the internet.

          Some of aged cheeses have a yellowing effect that makes them appear darker with age. Depends on the fat in the cow milk as well.

                    I noticed you used 2% milk. I would have thought you would need to use whole milk. Does it make any difference?? other than calories..

                      during my trips to bolivia, the maids would make that cheese every morning to have for breakfast with fresh baked bread and fruit....

                      good stuff, i didnt realize it was that easy

                        I actually made one with whole and one with 2%. The 2% is a little more moist. I think the 2% works better for a sandwhich style cheese. the whole does great with crumbles.

                              go to food www.foodtv.com and look at alton brown's list of stuff. he has made cheese as well, and lists out some other things one cheese as well. very yummy indeed
