I am trying to educate myself on what I can eat and what I can not. It is pretty hard to cook for one person and not waste a ton of food. I hate left overs as well. Anybody care to share a few diabetic recipes or meal ideas?

My memory is failing me right now, but there are several fresh fruits to avoid as well except on an occasional basis.

Heath, I am not, but, I can help you out, remember it's all about maintaining an even kill all day. Try not to spike up and down, for the most part all green vegetables are a free for all.
Corn is higher in sugar than most fruits actually, try to avoid at all cost.
Lean protein is your friend, even semi-lean.
From what I remember correctly you want to keep your carbs below about 30 grams per day if at all possible.
Cheese, lean meats, green veggies.

I bought 3 different books of diabetes... i read them and then came up with what I thought worked best for my life style... what i ended up doing was eating about 4 oz of meat 1/2 cup of startch and 1 cup of veggies... I would eat bran cereal w/ a packet of sweet and low for breakfast and then fit something into that format for lunch and dinner, i would also snack on almonds or something like that between meals...the one that worked best for me was Quick and easy diabetic meals... it has some menus, some reciepes in it... it also has ways to compensate for days that you "cheated"... I've lost about 25 lbs since I found out last yr and have kept it off, i still need to lose some more, but w/ proper planning it's not that bad...

Thanks for all the advice. Everything is going really well right now and the diet stuff is not to bad. My dietitian gave me some great advice and I am following it really good. So far my blood sugars are from 90-100 when I check them throughout the day. The hardest part for me is planning meals with my schedule and I hate leftovers. I have also quit drinking all alcohol as well.

when I pack my lunch, I pack snacks like cheese stix, boiled eggs, the snack packs with baby carrots, 100 calorie snack packs like ritz, oreos, cheez its. Try to eat a little something every 3-4 hours. The grocery stores sell single serving canned veggies now. usually can find em 2 fer $1.00.
I try to cook several chicken breasts, pork chops or hamburger patties on the grill, then vacuum seal them and throw them in the fridge. when its time to eat. get out a patty, a small can of veggies, slice up a tomato and wash it down w/ a diet DP!!
Sugar free jello puddin for dessert.

I was diagnosed last april with diabetes and it was nervous at first, but as long as you just space your high carb meals out and watch your cholesterol is the main thing, but my meals haven't really changed other than i don't go to fast food places any more and i stay away from the candy aisle.

Keep in mind that all red wines aren't the same.Had to try a few brands() before I found one that didn't mess with my blood sugar.
