One of my favorite food memories is sharing a plate with my better half at the rainbiw lodge in Houston. We had an elk chop and Nilgai tenderloin. Both grilled to perfection. The Nilgai being a tenderloin was a little more tender. The elk had a superior and much more robust flavor. One of the best steaks I've ever eaten. That spans several steak houses in Houston, one in Dallas a few in Chicago and one in NY.
It's important to keep in mind that "wild" game served at restaurants, was raised on a farm.
Texas whitetail that live in shin oak areas that are fed corn and protein year round. To be exact that area in Texas known as the South Plains Axis has great taste but the few I've tried were tough as a board. The meat was aged properly as well.
TBH venison police are out there thick today, y’all watch your six. Keeping it Cervidae, I’m going to have to say the Oklahoma mule deer buck I took from near Waynoka, or any of the several axis I’ve had. These still follow the red deer hind.
