I have my boned meat ground for jerky, .50 a lb. vacuum packed, place outside Hawkins. If I want pork sausage, I go to Mineola Meat Packing. 2 oz patties, $3.00 a pound, 12 lb box.

Processor fees??

Not taking any ones side here, but think about everything the processor has to cover; product, staffing, utilities, etc. Sausage/Processing fees will vary by processor. Typically the charge will state how much per pound for the sausage (price may vary based on the variety you choose) and the price for pork used to make the sausage.
I do make my own, but have worked for processors before. Ask the questions when you drop it off and that way you can be prepared or make changes to your order.

You dont price out “your” time. Thats ridiculous. The whole point of doing it yourself is you are willing to forgo your labor exp to save money. Sweat equity.
OP add your lease, hunting gear, bows, rifles, ammo, gas, trailer, meals, drinks up as well. Bet plenty on here are paying a hundred bucks a pound for deer sausage [emoji23][emoji23].

I never understood having sausage made. I have never found that deer sausage tastes better and it costs almost as much as what u can buy off the shelf. I save my deer meat for cutlets and hamburger. I buy sausage off the shelf. Maybe I just don’t eat that much sausage. I got chilied once having some slim Jim’s made. I took in two Hind quarters off a buck killed in Wharton County. I asked for a 50/50 mix. I ended up with over 100#s of slim Jim’s and a 300 plus dollar bill. Must have been the biggest hindquarters in history. I gave slim Jim’s as Christmas and birthday gifts for a couple years.
