    Processor fees??

    Took some de-boned meat to a processor to have turned into smoked jalapeno & cheese sausage, smoked cheese sausage, and chorizo. From their price list, I figured $75-80. Got a call that all was ready and the bill was $166. Saw that all the poundages I requested had doubled and they informed me that they double the weight in fat. I get the need for that, but I assumed that was included in the $3.15/lb + for sausage and $2.60/lb for chorizo. Looked back at their price list to make sure I didn't miss that footnote anywhere(it's not on there), and I know it wasn't told to me when I dropped it off. They offered to donate what I don't want, which wasn't the point of me complaining a little when they told me, but it would have been nice to know that my bill was going to be double what was expected and what it prices out at on their sheet.

    Is this supposed to just be common knowledge and I'm an idiot(actually, don't answer that)? Or do most processors actually let you know about this?

    Most of the time, if you bring in 40 lbs of deboned meat, you should expect 80 pounds of product in return (your 40lbs of deer plus 40 lbs of pork). That is if you are getting sausage products. Most processors I have seen use 50/50 with pork although some give you the option of say 60/40 or 70/30.

        It was already deboned? If so shouldn't pay the basic processing fee but maybe they charged you that which is normally $60-75

          Yes. This is most likely it. They weigh it off the end product

            I typically do the same thing, but had some work things pop up and wouldn't have time this go-'round, so I decided to just drop off what I couldn't do myself.

                I’ve used 2 different processors in the past and experienced the same thing. That’s what led me to buying a grinder and making a smoke shack.

                  Glad to know this. I do my own, however I was thinking I might take one to be done this year, guess I won't. $2.60-$3.15# for fat/pork kinda high. I usually use pork loins for my pork/fat they are usually 1.29-1.99 on sale.

                    They don't charge you based on what you bring in. They charge you based on what you take out. They didn't charge you "double the weight", they added to your meat which increased the weight. Pretty standard.

                      Right. I get that. Just would have been nice to know that ahead of time. That was my point.

                              Well, if that's not mentioned ANYWHERE or by ANYONE, it's not something most would know the first time they take meat to a processor.

                              I would assume they get pork fat pretty cheap, so at over $3/lb for sausage, one might expect the fat to just be figured into that price.
