Goto Granzines for sausage and sticks

You are in Buda. BonTon just outside of Kyle on 21 in Uhland is close to Buda and they do a good job. About 2 miles North of FM 150 and 21. Johnny G sold his place and it is not the same. Will never use Hudson's, previous bad experiences there shut that door forever.
Kleins Meats in Pflugerville is exceptionally good. They are a little pricey but do a phenomenal job. The dried Salami is to die for. Quite a drive from Buda.Last edited by Still Hunter; 10-01-2018, 04:07 PM.

Glad to hear some good reports from Johnny G’s. A buddy if mine had an axis processed there three or four years ago and it was inedible.
I’ve been a big fan of Hudson’s on south Congress for many years due to consistently excellent products. The drop off alley is flat nasty and they commingle all ground products for whitetail.
They will not commingle exotics if certain weight limits are met.
Last year I took a cow elk in to get some various processing done. It was a disaster. About 50% of the ground meat had bone fragments in it (from the added beef)- which is disappointing because I meticulously trimmed everything myself. They also jacked the backstraps. I thought it would be simple for them to slice, tenderize and vacuum seal (like I do at home). When I went to pay- they charged be a ‘cut up’ fee on the entire order. I explained that I had boned out all the meat. The only thing they ‘cut up’ and packaged were the backstaps. The lady in the office that’s why we charged the fee. I restated that the only thing ‘cut-up’ were the backstaps. She the proceeded to demonstrate a slicing motion with here hand to explain the process. I paid, left and emailed the owner. Within the hour the manager emailed back, profusely apologized and offered a credit for the fee. I like the jalapeño cheese bacon wrapped chops and planned to bring a whitetail in later in the season. Making a tongue and cheek joke about boning it out, dropped it off. At pickup, there was no record of my credit. There was total weight charge. I produced the email that stated j had a credit- and the office staff suggested it was fake. Turns out the previous manager had already left and there had been some additional turnover. They honored it, but Too much drama for me.

I took a huge south Texas doe to them and got about 2lbs of backstrap and not much ground meat. Sorry, but never again!
