    First pot of chili this year...

    Well its about that time for me.

    What is your favorite chili recipe?

    Here is mine...

    2.5lbs ground beef
    1 finely chopped onion
    1 finely chopped bell pepper
    4 tablespoons FRESH minced garlic
    2 cans of diced tomatoes (undrained)
    1 can tomato sauce
    1 can tomato paste
    1 teaspoon red pepper
    1 teaspoon of sugar
    some chili powder, salt, black pepper
    a dash of paprika
    1 bay leaf

    AND...

    I like to add 2 cans of light red beans (drained and rinsed, and make sure they are the light beans)

    Brown mean and drain then transfer everything to a crockpot

    Cook for 5-6 hours on low or 3-4 on high

    I like mine just how it comes out, but occasionally on my second bowl Ill add a slop of sour cream and fritos. The girlfriend turned me on to this and I kinda like it.

    Now im hungry. Headed to Krogers in a bit. This will on the list for tomorrows dinner

    Sounds good, still to hot down here for me to stand over a hot pot of chili.

      Wow sounds good, that's a lot of Red pepper, I bet that will clear the ole sinus cavity...

      I've made a slightly altered version of this for some time and have served it at some fairly large gatherings where taste may vary...everyone eats their fill and then some...

      I substitute chicken stock for the granules and finely chop some dried but still rubbery Ancho peppers plus use Ancho chilli powder for my dark and a little brown sugar.

      Margaret's Recipe

      Step 1
      2 lbs. course ground beef (chili grind)
      1 TBS Cooking Oil
      1 TBS Granulated Onion

      Add ingredients together and lightly brown meat

      Step 2
      Add:
      1 Can (8 oz) Tomato Sauce
      1 Can Beef Broth

      Cook for 30 minutes

      Step 3
      Add:
      1 TBS Light Chili Powder
      2 TBS Dark Chili Powder
      1 tsp Garlic Powder
      ½ tsp Salt
      ½ TBS Ground Cumin
      ½ tsp Cayenne Pepper
      ½ tsp Black Pepper
      1 tsp Chicken Granules (or 1 cube)

      Cook for 1 hour

      Step 4:
      Add:
      1 TBS Light Chili Powder
      1 TBS Dark Chili Powder
      1 tsp Paprika
      ½ TBS Ground Cumin

      Add water if needed

      Leave covered and simmer for 30 minute

        It is a lot of red pepper. It could be made w/o so much I suppose. We like spicy food around here though. I get that from my dad.

        He makes a stew that we call "Armando Stew" (gets the name from a Mexican mechanic that works for him) and it is amazingly good and simply to make. It has fresh roasted/blackened Anaheim peppers as the main spice ingredient. Ummmmmmm...

        When we visit my parents during the cooler months it is on the menu w/o evening having to ask.

            I have switched from the huge recipe to Ragin Blaze Chili. Best commercial made chili on the planet.

            Bet you $10.00 that I am Blake's best customer on the G/S.

              Love me some venison chili but it's still a little warm IMO. Regardless, simple is the way I roll:

              2 lbs venison (chili grind)
              1 lb venison (hamburger grind)
              1 package breakfast sausage (I think this is a key ingredient. I use Owens hot)
              1 large white onion (chopped)
              4 cloves fresh chopped garlic (or about 8 teaspoons minced)

              First, brown all meat and drain excess fat. Add chopped onion and garlic and sauté for about 10 mins.

              Then Add:
              46oz beef broth
              2 cans Rotel original
              2 16oz cans diced tomatoes
              1 16oz can tomato sauce
              My family likes beans in their chili so I add 2 cans Bush's Chili beans (optional)
              Bring all to a boil, then reduce heat
              Then stir in 2 packages of Williams Chili Seasoning Mix

              Simmer stirring occasionally for about 40 minutes to an hour...and that's it!

              Serve in a bowl over crushed tortilla chips and sprinkle with cheddar cheese and maybe a few extra chopped onions.

                Heres mine. I am gonna try Blakes mix this year though.

                Chili Recipe by Aaron V

                1 lb Whataburger sausage

                2 lbs 80/20 beef chili grind

                1/2 white onion chopped

                1/2 garlic clove chopped

                2 tbsp cooking oil

                7 tbsp chili powder

                1 tsp cumin

                1/2 tsp paprika

                2 tsp garlic powder

                1 tsp kosher salt

                1/2 tsp cayenne pepper

                1/2 tsp black pepper

                1 chicken bouillon cube

                1/2 lb cooked red kidney beans

                12 oz Shiner Bock beer

                8 oz tomato sauce

                12 oz beef bouillon

                In stock pot sauté onion and garlic in cooking oil. Add ground beef and sausage and brown well.

                When meat is browned, add tomato sauce and beef broth. Simmer for 20 minutes.

                Add 3 tbsp chili powder, 1/2 tsp cumin, garlic powder, salt, cayenne pepper snd black pepper and chicken bouillon. Stir well and simmer for 1 hour.

                Add 3 tbsp chili powder, 1/2 tsp cumin, paprika and Shiner Bock beer. Stir well and simmer for 1 hour.

                Add 1 tbsp chili powder and add more beer if needed to bring thickness to where you desire. Add beans. Stir well and simmer for 1 hour.

                Serve and enjoy!

                  Sounded good until you got to the beans.

                  I'm a fan of the Ragin Blaze chili, it's so simple and comes out prefect ever time. I'm also one that won't make chili until we get since cold weather.
