Closed. I just did 3 sirloins 1 min sear each side(lid open) then 7.5 mins each side(lid closed). A good Veterinarian with an AED could probably get them mooing again.
I grill with the lid open because I use a lot of heat and want to be able to monitor my steaks and be able to move them quickly. Plus, the lid is durn heavy. Lol.
I open it to put my steaks on and to add seasoning. Most of my steaks are 1 1/4 inch - Lid closed 6 min on one side 5 on the other. Pull and let rest 5 min. Done!
