      I'm going away from the norm....steaks I grill open.

      Most everything else closed or a combo.

      I do the steaks open as I like a Med-rare with a lot of char on the edges. In order to do this, you need high heat which would over cook the steak if the grill was closed. JMO....

        I do temp stuff on my smoker to follow the cook on a big hunk of tough meat like a brisket or porkbutt but a steak on a grill is not something I pull a thermo out for..
