Closed. I just did 3 sirloins 1 min sear each side(lid open) then 7.5 mins each side(lid closed). A good Veterinarian with an AED could probably get them mooing again.
I open it to put my steaks on and to add seasoning. Most of my steaks are 1 1/4 inch - Lid closed 6 min on one side 5 on the other. Pull and let rest 5 min. Done!
I grill with it open. I only close it when I need to step away and grab a pan or something. My dogs have been known to steal off the grill. Can't blame em, I'm a pretty good cook
