They may do it to deter city folks from hanging out in front of their pasture taking cellphone pictures. Kind of like a "mind your own business" sign that is literate - optional.

I don't have a problem with it. Hogs are just another varmit. Some people are scared to eat wild hogs due to diseases. Others don't like to mess with the nasty things. As mentioned probably a sign tree letting the landowner know hogs are being killed.
