Coming from a restaurateurs point of view of 23 years at independent sit down type restaurants, it needs to be done. Packaging does cost money and over time silverware and plates are paid for. A lot of times the containers cost the profit that would be made on the dish. Togo containers are a constant expense that simply gets thrown away. There is also a person that has to be responsible for putting that to go order together witch costs more than a server. Then we have the fact that most people will spend less than a customer at a table. So ultimately there is loss. ToGo orders also have to be cooked like everyone elses so the kitchen is slower to get out to the seated customers. Its math. Indipendant Restaurants make very little money so I applaud their efforts. Maybe it will start a trend.
