There is Ainsworth processing in Crosby , they do a pretty good job

I have taken about 5 axis and 10 oryx there. They do a great job

Bay Area processing in Pasadena does a good job also.

Stay away from midways.

I used Greaks at Froberg Farm between Alvin and Manvel for sausage this time around. Some of the better sausage I've had in a while. He wasn't cheap, but turn around was 1 week and it actually is your deer meat.

I didn't know they did processing. Good to know

As I have tried to source some ingredients for some of the sausages I make, I have noticed more and more places that will process your deer than I ever knew existed. I bet there are several in your area that you didn't even know about.

Walked into a small meat market a few miles from my house and they had a sign up that said "we are full, we recommend freezing your deer and bringing it back later." Never knew they processed deer there.
