I used Greaks at Froberg Farm between Alvin and Manvel for sausage this time around. Some of the better sausage I've had in a while. He wasn't cheap, but turn around was 1 week and it actually is your deer meat.

better be careful. the sausage will try to mount you after you pull it from the freezer.

I second Allen's in Huffman. Best smoked sausage I ever had made. Tell him you want the "Old Timers". For spicy, get the Cajun. Bobby says his pan sausage is the best. I intend to try that next... that and his jal/cheese smoked... I got some fresh Italian made, and it's great too.

He's quick too, but you got only 5 days to pick up your stuff when it's done... He doesn't have a lot of storage space. Great folks to deal with too.
