If you like, get a good bottle of red wine, preferbly cab or merlot, and enjoy.

    BTW, Happy Birhtday!

^^^^This^^^^ But I would do a Pinot Noir and drop a few dried cranberries on the salad

Just put the skillet on the grill when you light it or when you're building your fire if it's a wood fire (which is the best way). Let the onions/shrooms cook down and then put the steaks on... take it all off the grill together and let it sit a few minutes... My favorite add on is a baked sweet potato with chopped carmalized pecans and brown cinnamon butter...

By Jimminie, I think that's what I'm gonna do this weekend! ... some good thick rib eyes cooked (just barely) rare...
ill be over saturday afternoon and like mine med rare

Pre boil some red potatoes, slide and put in a pyrex dish in the oven with olive oil, kosher salt, sliced onions and sliced green peppers. Cook until they're as crunchy as you like them.

even tough a good steak needs no additions, you could top it with a HUGE dollop of horseradish sauce.

the previous wine suggestion works too!

                      HORSERADISH TWICE COOKED POTATOES

                      6-8 Medium sized potatoes
16 oz bottle Woeber’s Horseradish sauce
                      6 Tablespoons real butter
5 slices thick-sliced bacon cooked crispy and chopped
                      8 ounces Sour Cream
4-6 Cloves fresh garlic (ground to paste)
                      3 Tablespoons dried chives
                      1-cup milk
1-2 tablespoons Beaver Brand Extra Hot Horseradish
2 cups grated Tillamook Medium Cheddar
                      (optional)
Large pot half full of water
                      Peppercorn Medley
                      Sea Salt

Scrub potatoes and cut into chunks (6 chunks per potato). Bring pot of water to boil. Add potatoes (skin on) and boil until a fork can be pushed through chunks (semi-firm, NOT mushy). Drain potatoes and return to pot.

Add all ingredients EXCEPT cheese, a couple of bacon and a couple of pinches chives. Using blender on low, blend until potatoes are mashed. Don’t over blend. Some small chunks of potatoes are ok. Add sea salt and peppercorn medley to taste. For a great kick add 1 or 2 tablespoons Extra Hot Horseradish (I like this, my wife and kids don’t).

Transfer mashed potatoes to baking dish. Top with cheese then sprinkle remaining pinches of bacon and chives. Bake 20 minutes at 400 F or until cheese is melted and starting to bubble.

For garlic twice cooked potatoes, use a full bulb (or two) of garlic. Use only 6 ounces of horseradish.
                      ^^^^^^^^^^^^^^^^^Now that sounds freaking delicious!!
