Happy Birthday! Why not go traditional and get a huge stuffed baked potato? Cheddar cheese, crumbled bacon (not bacon bits), butter and sour cream (if you like it).

Or you can always have the bacon explosion: http://mantestedrecipes.com/recipe/5...explosion.aspx

              Bacon wrapped green beans.

              Fresh green beans
              Bacon
              Ragin Blaze
              Brown sugar

Bundle 7-8 green bean pods together, wrap with half slice bacon, pin with toothpick. Repeat until desired amount achieved. Sprinkle with brown sugar and Ragin Blaze. Bake at 350 degrees until bacon is done.
              Bon apetit

Twice Baked Horseradish Mashed Potatoes - But that's just me. I'll have to see if I can find my recipe.

                HORSERADISH TWICE COOKED POTATOES

                6-8 Medium sized potatoes
16 oz bottle Woeber’s Horseradish sauce
                6 Tablespoons real butter
5 slices thick-sliced bacon cooked crispy and chopped
                8 ounces Sour Cream
4-6 Cloves fresh garlic (ground to paste)
                3 Tablespoons dried chives
                1-cup milk
1-2 tablespoons Beaver Brand Extra Hot Horseradish
2 cups grated Tillamook Medium Cheddar
                (optional)
Large pot half full of water
                Peppercorn Medley
                Sea Salt

Scrub potatoes and cut into chunks (6 chunks per potato). Bring pot of water to boil. Add potatoes (skin on) and boil until a fork can be pushed through chunks (semi-firm, NOT mushy). Drain potatoes and return to pot.

Add all ingredients EXCEPT cheese, a couple of bacon and a couple of pinches chives. Using blender on low, blend until potatoes are mashed. Don’t over blend. Some small chunks of potatoes are ok. Add sea salt and peppercorn medley to taste. For a great kick add 1 or 2 tablespoons Extra Hot Horseradish (I like this, my wife and kids don’t).

Transfer mashed potatoes to baking dish. Top with cheese then sprinkle remaining pinches of bacon and chives. Bake 20 minutes at 400 F or until cheese is melted and starting to bubble.

For garlic twice cooked potatoes, use a full bulb (or two) of garlic. Use only 6 ounces of horseradish.

Mushrooms sautéed in butter, soy, Worcestershire & red wine.

Fresh spinach quick sautéed with a little minced garlic in olive oil.

Baked potato bites. Cut up & boil potatoes. Then cover with butter, cheddar cheese, bacon pieces, chives & a dollop of daisy.

Fresh asparagus wrapped in bacon. Take 3 stalks, wrap in bacon, salt, pepper. Lay out on baking rack. Drizzle with olive oil & brown sugar mix. Bake in oven.

And this is going to sound crazy, but there are some already made Mac n cheese in your grocers refrigerated section--- I can't remember the brand-- but it says "Four Cheese" macaroni & cheese. It's in a plastic container that you peel the plastic back (but its not a frozen food, refrigerated only). I cannot make a Mac n cheese better than this ready made stuff.
