That's the great thing about Texas, every corner store has breakfast tacos. That is the first thing I notice when I travel. No one else does.

My favorite is in Waco at Lolitas and called the elephante. It is a huge tortilla with eggs, beans, sausage, bacon, potatoes and cheese. I used to get one every Saturday morning.

My favorite in Austin was the Otto at Taco Deli. It was refried black beans, bacon, cheese and avocado. However, it is really easy to duplicate at home.

I am still trying to find my favorite now that I am here in SA. I need to find a good place closer to my casa so I don't have to drive too far to get the taco.

Yep. I consider breakfast tacos in TX the same (availability) as Boudin in Louisiana. Every corner store in my home town (New Iberia) had Boudin and Hot Links in the steamer behind the counter when I was growing up there. I move out of LA, and can't find the stuff anywhere! But breakfast tacos are the same in TX - they are everywhere you look.
