I worked on ranches in south Texas when I was younger and ate a lot of tacos. Best ones were egg, potato and chorizo made by Mexican vaqueros, wrapped in foil and warmed over a mesuite fire in the pasture while we tried to stay warm on cold winter days. Thick, chewy tortillias make all the difference. Beats any store-bought Ive ever had.
