I could go on for an hour about Collared Peccarys. All the kidding I got pushed me to research them. Spent a number of hours in our main library. They have done a good bit of research on them, but as of 10 years ago there were still questions.

We eat it all the time, in fact as I type this Iam eating summer sasuge we made out of last years javelina. We do sausage's out of most of the meat. But have made small butterfly steaks out of the back straps and they were not bad. But the sausge we make is actually realy good.(If the wife will eat it, any one will eat it,believe me)
