      I've cooked it slow and low for 10 hrs in a brown gravy

      Definitely had a strong taste as it was OK , I'd eat it again if that's all I had left in the freezer and was starving

          Friends give me heck about eating rat.
          There is only one way to get it's cape off. Only one way...
          Pull it out of the freezer and soak it. You can use milk or Italian Dressing. Cook it hot and fast.2nd Year I snuck it into meals at camp everyone turned to the dark side.

          I could go on for an hour about Collared Peccarys. All the kidding I got pushed me to research them. Spent a number of hours in our main library. They have done a good bit of research on them, but as of 10 years ago there were still questions.
          Absolutely an incredable spieces, and will never shoot another. {Dolphin cool}
          Yes I know they are a problem in some areas and need to be thinned.

          And oh heck they are good.

            We eat it all the time, in fact as I type this Iam eating summer sasuge we made out of last years javelina. We do sausage's out of most of the meat. But have made small butterfly steaks out of the back straps and they were not bad. But the sausge we make is actually realy good.(If the wife will eat it, any one will eat it,believe me)

              I wanted to try it but could not get past the smell trying to clean it.

              It's the carp of the mammal world IMO. You "can" eat it but it takes too much preparation and care to make it good. Just not worth the trouble IMO. Carp are the same way..stinky/gross on the outside and full of bones, but if you take enough time and care cleaning/cooking they are edible also...

              I'll stick with feral hogs.

                We eat them, make tamales out of them and you can't go wrong by doing this. Passed them out to some friends and said they loved them--what kind of meat did you use--Javelina!! LOL!

                  Put him on ice for a week and poured several coke's over it while on ice. Then salt water brine for twenty four hours. Wrapped in bacon and smoked for ten hours.

                  It was dry but the meat was very good. Next time I'll inject it with some Tony's.

                      They make great sausage, brats and tamales! Joe and the guys at Syracuse custom meats make it for me. I've had several folks rave about how good the sausage and brats were!

                            I've cooked some that had a faint musk smell, but you couldn't taste it.

                              I've eaten it for years, in fact I got my nickname from all the javi's I've killed and eaten in my lifetime.. Some of the finest dining there is, if taken care of correctly...

                                Never been around a Javi, but there ain't no way they smell worse than those stinkin wild goats that used to be around Possum Kindom Lake.
