Bellville meat market venison hot dogs

Anyone had their meat processed into hot dogs yet? I thought about it but 25 lb minimum seems like a ton of weiners

My neighbor was given some last year and he still talks about them

I had a guy give me 2 packages he had done at Klein's Meat Market and they were surprisingly good. I don't know that I would want 25lbs of them however. I got some hotlinks made last year and got 15lbs and I was not real fond of it so I have 10lbs still in the freezer. Not sure if it will ever get eaten.

I got 25 lbs worth last deer season from them. The Vienna Hot dogs is what i think they call them. They are good the only knock i have is they use sausage casing i guess so if you grill them they do have a crispy sausage exterior if that makes any since. Their Bratwurst however are amazing.

Not from Bellville, but I had some from a processor in maryland and they were good. Even had jap/cheese version. I need to find someone close to Central TX that does them

Like Ricochet said, they taste good but have more of a sausage feel to them when cooked.

I wonder if cooking them in a pan of water would make them taste more like a hot dog than sausage

I had some made last year, and will get more made this year.
More sausage flavor/texture than hotdog, so way better. Casing can get tough if overcooked.

I got them last year. I thought they were great, but we still have a lot left.

Love chili cheese dogs and sauerkraut with mustard hotdogs

25lbs is probably wet weight so I'd expect a little bit of shrinkage on the end product. Figure 8 weiners to a pound so about 160 dogs give or take of end product.

This is a very timely thread for me because I was just looking for a place to get natural casing hot dogs made. My parents spend a ridiculous amount of money on these things down here.

For the people that have had them, do the casings get tough because they are collagen or because you're not used to natural casing hot dogs? From what I have read online they should be made from lamb/sheep casings for size instead of hog casings. I don't have any experience with collagen casings but I can only image those can get tough.
