It's not in Texas but in Ardmore Oklahoma is where I had the best hamburger, The Hamburger Cafe in downtown Ardmore......small place that can seat 15-20 folks at the most.....hungry lunchers will wait outside for a place to sit....4ladies run the place and each one has their own job, one to cook fries, one to cook hamburgers, one waitress, one placing the fixin's on the bun...

I will have to thrid "The Hill" in Bellville. Have not had one in a while.
Here in Houston - Prince's or Charlies. I am not sure if Charlies is still open, but there used to be one right next to Lupe Tortillas on Hwy 6 and I-10.
There is a Texaco ( used to be Texaco) station & meat market on the loop in Nacadogches. They make a mean burger.

Gourmet...Centerpoint Station in San marcos
Chain.....Whataburger with grilled onions and japs and cheese only(forget the lettuce)
I also second the Leggy entry of Kellers in Dallas. It may not be gourmet but it is one bad A burger. Is it the #2 or #5 (one is at Jakes) that is double meat with thousand island.....man I'm gonna head north as we speak.

Big Star in Rowlett!
Hole in the Wall Newcastle is good but the Hole in the Wall on Harry Hines (Blues/Biker Bar) may have the best in Dallas.
I've eaten at that NW Highway Keller's as long as I can remember...good stuff for sure.
For a production line burger, Culver's deserves a mention.
