Every meat man in the world will tell you gutting your deer is essential to getting their body temp down as quickly as possible. Also, we always age our deer for several day before processing. It will not age as well quartered as it will whole.
As far as quick goes, yup that dude is quick! If it were a trophy buck however he would have ruined alot of cape and made more work for the taxi
