270 is my preference because I've been shooting it since I've been deer hunting, shoots flatter than the 308 and is generally easier to find than 7mm-08... Ammo that is

.270 (because it's my favorite, nothing more, nothing less, I own two of them)

The .308 and 7mm-08 can be had in short action rifles and don't seem to be terribly affected by short barrels, that's an advantage. 7mm-08 doesn't have a wide selection of bullet weights but neither does the .270 if you're going off factory loads. The .270 is a flat shooting round that is the hammer of Thor on whitetail and can still adequately take elk and moose with premium bone crushing bullets (Nosler Partition, Barnes X, Trophy Bonded Tip, etc). The .308 has excellent bullet choices in weights from 110-200 grains but loses out with less powder space to drive them really fast. I have a .30-06, so there's nothing a .308 can do that my '06 can't do better. The 7mm-08 has taken plenty of elk but it's not ideal. In order of MY preference:

              1. .270
              2. 7mm-08
              3. .308

My next rifle will be a 7mm-08

I don’t think it really matters which one you beat a dead horse with.

I'd have to choose the .308 because it will kill anything I can afford to shoot within 400 yds.

I hunt with .270 but from what I've learned recently the 270 is a hammer and flat flyer out to 500 with knockdown power, the 308 is proven in military and hunting, though not as flat it has consistent flight and knock down power easily to 700-800 yards but more drop. The 7mm08 is a flat flying round, less recoil, knock down power well beyond 500 with great ballistic coefficient for hits at 1000 or more target shooting. Whitetail and pig hunting in TX, I'm going 270 all day, bigger game then i start looking into the 308 and 7mm08 depending on hunting elements. Target shooting.. 7mm08 for sure

As far as availability I'd go with .308 but the .270 is a great round. I just bought a 7mm-08 but have yet to put a round through it. I own all three and will equally be happy with all but I'd have to grab the 308 in a pinch.

.308, favorite round, confident in what it can do, never has let me down.

so when the game gets tougher you choose the less powerful round?

If I had to pick 1 it would be 270 yet 7-08 is what I usually reach for if I'm pig or deer hunting. my 308 is what I prefer for longer range shooting but that is mainly due to configuration of the rifle and optic

I like the 308 for it's versatility of bullet sizes. It can be very accurate out to long distances as demonstrated by the military. I also like the 270, but not as versatile.
