Getting the trust is the easy part. I would figure 12 months on anything you submit on and be happy if you get it faster.
As to who has to sign in front of the notary, anyone listed as a trustee has to sign. For example my wife & I are trustees, my kids are beneficiaries. My wife and I had to sign, my kids didn't even though some of the are 21 or older.
Are your kids over 21 allowed to possess the items?

EDIT: I just talked to Sean and no, beneficiaries cannot be in possession of NFA items without a trustee present.
Aren't there issues with access and not being a trustee if they are stored in a safe in your home and neither you nor your wife was home with said children? This would only matter if said children have access to/combination of the safe, I believe?
