    for you do it yourselfers I make my own pan sausage with my deer meat, as you know you HAVE to add pork for some "fat" in the meat, what works well with me is I buy the boxes of " bacon end pieces" Wal-Mart, H.E.B. ect. all carry it, you just have to play around with how much to add, I normally go with a 3 to 1 ratio. it also works good in making your " hambuger " meat, bacon burger.. mmmmmmmmmm good. you can get the sausage seasoning @ Brookshire Brothers/ H.E.B. ect

              I've always mixed 60% pork / 40% deer. That is just the mix that I like. I really like that mix for non-seasoned bulk "hamburger".

                I do the same, but 4 to 1. and would probably have put this in the recipe section.

                  I have been doing 1 to 1 and it is not at all like Jimmy Dean. 4 parts pork to 1 deer might be the deal....

                    Get the good fresh fat trimmed right off ribeyes and sirloins from the meat department. Makes the hamburgers taste like ribeye burgers.. mmmmm mmmmm good.
