It may be sacrilege (refer to our resident presbyter, Gumbo Man, for all ecclesiastical canon related to making gumbo) but I bet it tastes good. Do you make Red Beans and Rice? I bet the smokey flavor in your drippings would taste good there, too.

The best Gumbo you will ever have is from smoked Turkey and all of the drippings from the pan.

Smoked chicken or turkey tasso is the bomb in a gumbo. Just got a cooler full from Teet's in Ville Platte. Dang good in beans too.
