Great trick. Thanks for posting! we always store extra roux in the freezer in zip lock bags....don't know why, just the way my Grandfather and Aunt's (from Garyville, Reserve, Laplace) did it. Always stored it in 1/2 cup servings so if we were making roux peas or whatever. The microwave roux is great! The dry oven roux has never tasted the same to me and we have tried it, it's not bad....just not the same depth as regular roux.
