        If you have a vacuum sealer be sure to use it. Keeps the meat fresh and all you need to do is drop into a pan of boiling water to heat it up. We put up sliced and chopped this way. Makes for a easy quick meal. We make tacos, nachos, enchilidas, put into a bowl of beans, mixed it with cream cheese and stuff into peppers. One of my very favorite things is a goat cheese brisket omelet.

          A favorite in our house is bbq spaghetti. Chop all your leftovers small (briskets, rib meat, pulled pork, chicken sausage, etc). Heat in a saucepan, add bbq sauce, serve over spaghetti noodles. Little different every time from your meat mix and your sauce choice. We tend to use salt lick sauce.

          Also can’t go wrong with brisket Mac n cheese...or chili.

                    Vitek's BBQ in Waco sells the "Gut Pak" which I think is delicious. It wasn't till I started cooking brisket that I concluded it's basically a Frito Pie made with leftovers. Instead of chili, it's chopped brisket, BBQ beans and smoked sausage over Fritos and cheese. Add in other elements like jalapenos, onion, etc as desired. Very tasty!

                          Vacuum seal whole and when are ready to eat some brisket take out and heat up to internal temp of 150, slice and eat. It will be as good as the day you smoked it.
