Po boy recipes

Anybody have any good po boy recipes? Also What's the best type of bread that is common in stores? Cajun Blake I know you have to have some good ones!

gotta be fresh baked french bread; preferably Leidenheimer (NOLA) or Langlinais (Laffy)
my favorites:
soft shell crab
debris (roast beef)
shrimp/oyster

College buddy of mine was from New Orleans and we'd crash at his house for Mardi Gras. His dad would get one that had to be 5 or 6 ft long of roast beef that we would eat on for the three or four days we stayed there, freaking amazing!
