    Bacon wrapped backstrap suffed with candied jalepenos

    We make the candied jalapeños ourselves.
    Buy a gallon container from Costco or Walmart and pour out the juice. Then add 4# of sugar. Put lid on and rotate every day for 6 weeks.

    I butterflied the backstrap medallions and put 2 or 3 jalapeño chips in the middle, then wrapped with bacon,

    Grill em till bacon is done.

    Did this with tenderloin and heart and it was amazing.

    Looks good.

    Does the backstrap get too done by the time the bacon is ready? That's the problem I have when I bacon wrap dove.

          I don't cook on high heat like some do with dove. I cook over med heat...@300 degrees

          The bacon is browned and the meat it done perfectly.

              That's a lot of candied jalapenos! That would take me a year to consume. Do they preserve well? Do you keep them in the fridge during and after the candying process? What else do you use them for? I'm the only one who eats jalapenos in my house, so I have to know my options before committing! haha!
