    deer jerky

    well the wife and I finely made some for the first time. we used just the pack of cure n seasoning you get at academy. after making the hole batch i added a little extra kick to mine. all n all came out good just took longer than i thought to dehydrate it all. started at 5pm last piece was taken out at 6am. long night was get n up evry 1 1/2 hrs to pull the done pieces.

                    the lowest our oven would go is 170 which is what I used. they say between 150-180 n oven. I almost thought about smoking them in the smoker but I am soooo glad I did not now that would have been a lot of work. OH YEAH!! keep the oven cracked I used a wooden spoon you want the moisture to get out. half way threw my wife also sprayed some with a teriyaki brown sugar concoction just to see, those came out good to. words of advice get a sharp knife, freeze meat then let defrost a little makes it easier to cut, try and cut all pieces the same size otherwise you will be do n what I did and and to pull some as they cooked.

                      Here's a good little writeup about the different ways to dry/cook jerky.



                      I've tried the oven method and the dehydrator method with ground jerky. Both give different results (one is drying, the other cooks it, so you get a different bite.) My next attempt will be in a electric smoker.

                        I think 170 is the best temp for beef and venison jerky. Lower and it takes forever. Higher and you might burn it.

                          I've also had good success instead of hanging the pieces laying them on parchment paper on cookie sheets. You don't get as much in the oven at a time, but it's much, much easier than hooking and hanging it.
