    Tex-mex chicken and rice

    Found this recipe online. Tryin it now.

    4 chicken breast
    1 cup hot sauce
    3/4 cup of rice( i have to use brown rice)
    1/2-1 cup water(im using chicken broth) i used 1 cup cause i used more rice
    Ragin blaze seasoning( or ur choice)

    Mix rice, water, hot sauce in a shallow baking dish, place chicken on top of mixture, season with rb(or whatever you want) cover dish with foil and back 45-55min or til chicken is done at 375.

    You can sprinkle with shredded cheese.

    Also calls for 1 cup whole kernel corn and 1 can cream of chicken soup but i cant eat those so i didnt use them.

    Cooking it now for my lunch tomorrow and tues. Ill post finished pics in about 45min

          Heres a pic i put a touch too much broth. A little soupy but i tried a bite. Its awesome! I think with some beans it would even better. Cant really do pintos unless i eat just a little.

                      Here it is tonight, with some added stuff. Did everything the same, except i cut up some red, green, and yellow peppers with onions too. Before i put it on oven.

                        After it cooked. The peppers were a nice touch. Great flavor!

                            I tried this last week. It was a great recipe. Fit my new lifestyle change perfectly. I am trying real hard to get off the fried food bandwagon. So this was a great idea. As spoken earlier, a great lunch as well.
