              Jack Rabbit Burgers
              Thanks to Roilynne Vallely-lipscomb for this recipe.




              ~ rabbit(s), cut into pieces
              ~ bread
              ~ egg(s)
              ~ salt and pepper
              ~ chopped onion



              Place the rabbit pieces in a pressure cooker and bring to full pressure for 10 minutes. If you don’t have a pressure cooker, boil the meat until tender and it starts to fall off the bone.

              Once cool, remove meat from bones.

              Grind the meat. Use several slices of bread either fresh or stale to push all of the meat out of the grinder when done.

              Mix well. At this point you can separate the meat and freeze some to use next time.

              Place ground meat in a large bowl. Salt and pepper to taste. Add chopped onion if desired. Also add your favorite seasonings if desired. Add enough eggs to make it stick together. Mix well.

              Shape into patties and fry in hot oil until crisp on the outside.

              Serve as is with mashed potatoes, vegetables and either brown or mushroom gravy or make your own gravy from the drippings. Or, serve on buns like regular hamburgers.

                This recipe is for one jack rabbit
                1 - tsp corriander
                1 - tbl spoon salt
                1 - tbl spoon course black pepper
                2 - tsp cumin
                2 - tsp mexican oregano
                1 - tsp cayan pepper
                1 - cedar cooking plank soaked for one hour in water
                wash JR well rince and pat dry, then rub JR down in extra virgin olive oil, combine above ingredients and rub all over JR.
                Light your grill and get it up to 350 degrees
                place cedar plank on grill place JR on cedar plank, cover grill and cook to an internal temperature of 160 degrees or until JR is a light golden brown.
                Now take JR and throw it in the garbage can and seve the cedar plank while piping hot.

                  2 quarts beef stock and 1 old leather shoe. Boil for 30 mins. remove Jack rabbit and toss in trash. Eat shoe.

                    I have one for Chili and Tamales. Good ranch food when your poor. I'll find them in AM. Mom's old recipe. Havent had it in years but remember it was gooood, of course we were hungry back then.

                      The one time I had it I swore never to do that again. It was like duck, gar, and a tird in one bite

                        Soak it in salt water to remove any blood from meat, then make it up as you go along. I've made jack rabbit taste like bbq chicken, cheap steak, and like... jack rabbit (not good).

                            There's a guy that does what looks like a good JR soup on the show meat eater. I bet you can find it on the meat eater website.

                              I cooked jackrabbit one time in a soup and it was so tough you couldn't chew it. I see someone said to grind it. Sounds like the best option. Flavor was good just tough as boot leather
