Never had a dove that tasted good. How do you do yours?

      I think one problem many people have is that they over-cook them. If you use an entire slice of thick cut bacon - it takes way too long to get the bacon done & the dove is over done. I use the thinnest bacon I can find & only use 1/3 of a slice per dove (no bone, just the two breast halves).

        dfabilene, you are all over it. I pre cook my bacon and pull the dove off the grill at mid rare so they will not be tough. The cook time is very important.

            I soak mine In a cold bowl of water in the fridge for a day before I cool them. Seems to take some of that wild taste out if them but I like dove anyway I have ever eaten it.

                Filet the breast meat of the bone. Slice of jalapeño, slice of Munster cheese, wrap in bacon and put it on the smoker. Freakin awesome.
