    Dove heart and gizzards?

    I have had chicken gizzards before but not dove. Anyone have advice on cooking them?

    My wife wraps the doves in bacon and mixes a package of mushroom gravy. Bake till done. She throws the hearts & gizzards in the mix to cook.

    that is the first thing I spoon on my rice.

      Boil them in a pot and make dumplings with them. Very good! Just make sure to simmer them for a while so they will be soft.

        The only way I have ever had dove hearts is raw.

            I saute them in butter and tony's.

              I keep the dove hearts and gizzards, saute them and add to risotto, rice, etc. with lots of butter and parmesan. Here's a video on how to clean the gizzard:



              The guy in the video has a pretty good cookbook, by the way called Hunt, Gather, Cook. Hank Shaw.

              I've cooked redhead and pintail gizzards, but they are much larger and tougher.

              I also highly recommend Jesse Griffiths' book, AFIELD

                I feed them to my dog as a reward at the end of the day. He just stands there and waits for the treat while we are cleaning the birds.

                      I fry them up with onions, garlic, salt and black pepper and serve it over rice.

                      Buddy of mine uses this Jerk seasoning it's pretty spicy but tasty.

                        When I was younger and we kept them, mom would just fry them whe she fried the dove breasts.
