    Grilled to perfection backstrap!

    Im bored at work so why not post another good recipe! While most people were spending 100's on Valentines Day, i grilled backstrap for my gf and I. This is a simple recipe but making sure your fire is at the right temp is key. Take the backstrap and cut it into 2" steaks. Brush with olive oil and roll in into the spice mixture. Grill each side 3-4min fliping only once! I served this with fresh Green beans and a Waldorf salad. Enjoy guys!

    spice mixture:
    2 tbs whole peppers corns (crushed)
    1/2 tsp smoked wood salt(got it at HEB)
    1/2 tsp ancho chili powder
    1/2 tsp san antonio chili powder (got it at HEB)
    1/4 tsp chipotle chili powder
    1/2 tsp garlic powder
    1/2 tsp light brown sugar
    1/2 tsp cumin

        The only thing I left out is when I take them off of the grill I brush them with a little salted butter. Otherwise they wouldn't look juicy as they do.

                Grilled backstrap has become a favorite in our house. We used to only chicken fry ours but grilled is a regular at our house now.
