These are great at camp or any time! I give to buddies at Christmas.
1/2 cup water
2 cups white vinegar
1/2 tsp cayenne pepper (I use habanero)
1 tbs red pepper flakes
1 tsp minced garlic
1 tsp paprika
1 tbs black peppercorns
1 tbs kosher sea salt
1 1/2 tbs pickling spice
1 tbs red food coloring
add all this to saucepan and bring to a boil for 10 min. (OUTSIDE ONLY!!!! IT MAKES MACE IN THE HOUSE!!!!! YOU WILL NOT BE ABLE TO BREATH OR SEE! EVEN WITH VENT HOOD)
1 large onion sliced in thin rounds
1 jar/can baby corn
2 clove garlic
2 whole bay leaves
4 jalapenos quartered (leave seeds)
2 packs 14oz Polska Kielbasa sausage in 1/3rds and quartered(or little smokies/any cooked sausage. I have used hot dogs)
2 large wide mouth mason jars (boiled)
Place rings of onion, bay leaf and clove of garlic on bottom of jar
layer vertically sausage and corn. Repeat till full.
Using a funnel, pour in liquid. Take remaining spice from pan and spoon on top.
In the sink.....place lids and set to cool upside down.
Place in fridge for 2 days(shake often) and eat.
The sausage will absorb the red food dye.
I have included a pix of the pickled hotdogs. (You must split or they don't pickle well.)
I also do pickled eggs.
